Sauterne:

This famous French appellation produces some of the most outstanding sweet wines in the world. Situated within the Graves district of Bordeaux, the area includes the five communes of Barsac, Bommes, Fargues, Preignac, and Sauternes. The dominant grape in Sauternes is Sémillon, although the final blend generally includes some Sauvignon Blanc and, occasionally, small amounts of Muscadelle. In good vintages, this appellation is the lucky recipient of the right climatic conditions to infect the grapes with botrytis cinerea (noble rot). This beneficial mold causes the grapes to shrivel, leaving sugar-laden fruit full of rich, concentrated flavors. The best Sauternes wines come from low-yielding vines that have been hand-picked to ensure that the grapes are not culled before reaching the perfect degree of required ripeness. The resulting classic Sauternes wine is rich and sweet—the botrytis cinerea contributes a desirable honeyed and complex nature to both the aroma and flavor.

Santa Ynez Valley:

In Santa Barbara County, this was the set, and location of shooting for the movie "Sideways". Located in the central coast of California, the region runs east to west along the river surrounded by the Santa Ynez Mountains and the Rafael Mountains. The very cool temperatures on the coast become progressively warmer as the valley moves inland.

Marlborough:

When the first growers planted grapes in Marlborough in the 1970s (there is evidence of plantings as early as 1870s), it is unlikely they would have foreseen the extent of the growth and fame that the region’s wine industry would achieve, based upon a single varietal called Sauvignon Blanc. The distinctive pungency and zest fruit flavours of the first Marlborough wines, in particular Sauvignon Blanc, captured the imagination of the country's winemakers as well as international wine commentators and consumers and sparked an unparalleled boom in vineyard development. Worldwide interest in Marlborough wines, particularly Sauvignon Blanc, has continued to fuel that regional wine boom.

Cucumber and Red Onion Salad

Ingredients

2 cucumbers, peeled and very thinly sliced
Salt
1 cup cider vinegar
1/4 cup sugar
1/2 red onion, cut in half and thinly sliced
chopped fresh dill

Preparation

1. In a colander, place the cucumber slices one layer at a time, lightly salting each layer. Put a plate weighted with a heavy object on top of the slices, then place the colander over a bowl to catch the water that drains from the cucumbers. Refrigerate.

2. In a saucepan, heat the vinegar, sugar, and red onion over low heat until the sugar dissolves--this shouldn't take more than 2 or 3 minutes. Transfer to a serving bowl, cool, and refrigerate.

3. Remove the cucumbers from the refrigerator, and rinse them under cold water. Pat them dry with paper towels and add to the onion mixture. Refrigerate, covered, for at least 3 more hours.

4. Drain the cucumbers and onions, reserving 5 tablespoons of the liquid. Toss the cucumbers with the reserved liquid and garnish with the chopped fresh dill.
